Harvesting & Preserving

Harvesting and persevering food is an essential aspect to human life.  Planning for harvest and preservation of food should be planned at the same time.  Much too often, food is wasted because no one harvested it, or they harvested a whole crop, but they just rot in a box in your pantry.  There are various methods age old and new.  My favorites are freezing and dehydrating foods; as well as canning jars with minced garlic, salsa, tomato sauce, jams, etc.  These methods are simple for the most part.  Just clean and prepare the food as if ready to eat, or chopped up ready to cook with; then put in a freezer bag in the freezer, or place in the dehydrator.  Canning required boiling to seal, or a vacuum seal.
